Blueberry Cucumber and Mint Mojitos


  • 1.05 oz Blueberry honey syrup
  • 2 oz of Gin
  • Juice from half of a lemon
  • 5 fresh mint leaves
  • 5 slices of cucumber
  • 5 oz of soda water 

Optional Garnish

  • Sliced Cucumber
  • Mint
  • Blueberries
  • Lemon slices

Blueberry Honey Syrup

  • 4 cups fresh blueberries
  • ½ cup water
  • ½ cup honey
  • Juice from half of a lemon

Step 1: Add 1/2 cup of water and the blueberries to the pot and apply low heat. Allow to simmer for 15 minutes. While the Blueberries are simmering you can crush them with a potato masher, or the back of a spoon, this will release the blueberries flavor faster.
Step 2: Strain the blueberry liquid through a fine mess strainer into a stainless steal or glass bowl. You are looking for about half a cup of liquid. If you have more than half a cup of liquid turn the heat back on and simmer until the extra liquid has evaporated.
Step 3: Add the ½ cup of honey into the blueberry liquid and stir to combine.  Chill the blueberry honey syrup before use. 

To make the cocktail

To begin assembling you cocktail squeeze half of a lemon into a cocktail shaker add 5 slices of cucumber and 5 mint leaves muddle with a pestle to release the juices, add the blueberry honey syrup and the gin. Add a scoop of Ice and shake the shaker vigorously for about 30 to 45 seconds.  Add ice to your cocktail glass, you may want to add fresh lemon, cucumber and mint into the glass. Use a strainer and pour the liquid into the cocktail glass. Top with soda water.
