Miso Mushroom Soup – With Farro, Potatoes, & Rocket

2ozDried Porcini Mushrooms Soaked, Retain Liquid
½cupOlive Oil
8 ozFresh Button Mushrooms quartered
8ozFresh Wild Mushrooms rough chopped
2Shallots medium diced
2 cupsOnions medium diced
1cup Leeks – White Part Only medium diced
1cupCarrots medium diced
1cup Celery medium diced
10Garlic Cloves quartered
¼cupTomato Paste
⅛tspCrushed Red Pepper Flakes
1½cupFarro
1cupRusset Potatoes medium diced
2cupsBaby Spinach
8 cupsWateradjust as needed
½cupMiso Boom
1tbspApple Cider Vinegar
¼cupLiquid Aminos
¼cupNutritional Yeast
Bouquet Garni (Cheesecloth)
6sprigsFresh Thyme
6Bay Leaves
Optional Garnish
Baby Rocket (Arugula)
Sumac
Sesame Seeds
Sesame OilDrizzle
To Taste

White Pepper
Instructions
Saute vegetables in the olive oil until tender
Add garlic, tomato paste, and chili flakes until fragrant
Add water and bouquet garni
Bring to a boil and add farro
Cook for 15 minutes and add the potatoes, cook until potatoes are tender
Add miso and remaining ingredients except spinach, simmer 5 minutes
