Dexter’s Ravioli with Marinated Beef Tips

Ingredients

Noodle Dough

  • cups All purpose flour divided
  • 9 Egg yolks
  • 1 tbsp Olive oil
  • 3 tbsp water

Ravioli Filling

  • ¾ cups Mashed carrots (5 large carrots)
  • ¼ cup Freshly grated parmesan
  • 1 tbsp Butter
  • ¼ tsp Ground cinnamon
  • ¼ tsp Ground red pepper
  • Salt and pepper to taste

White Sauce

  • 2 tbsp Butter
  • 2 tbsp Flour
  • cups Milk
  • 1 tsp Minced garlic
  • Salt and pepper to taste

Marinated Beef Tips

  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Butter
  • 3 cups Beef Tips

Beef Glaze

  • 2 cups Maple syrup
  • 3 tbsp Soy Sauce
  • ¼ cup Dried Cherries
  • 1 Lemon
  • ½ cup Sugar

Instructions

Ravioli

  • Measure 2 cups flour and sift into a bowl.
  • Mix the egg yolks with oil and water.
  • Add egg mixture into flour and mix until it starts to come together.
  • Dump dough onto floured surface and knead until dough forms a ball.
  • Knead until elastic, wrap in plastic wrap, and set aside for at least 15 minutes.
  • Cut dough into four pieces.
  • Roll out using a rolling pin or kitchen aid mixer attachment until you can see the letters of a newspaper through the sheets.
  • Mix all ingredients for filling.
  • Place ½ tbsp mounds 2 inches apart on one sheet of pasta.
  • Wet the sheet around the mounds with water using a pastry brush or your fingers.
  • Place another sheet of pasta on top and seal around filling.
  • Cut out around the mounds and boil in salted water for 4-5 minutes.
  • Repeat with remaining sheets of pasta.

White Sauce

  • Melt butter and add garlic.
  • Add flour and whisk to combine.
  • Add milk, whisking until smooth.
  • Heat until thickened.
  • Add salt and pepper to taste.

Marinated Beef Tips

  • Heat cast iron pan on medium high heat
  • Melt butter in pan
  • Season meat with salt and pepper
  • Place meat in pan and cook until correct temperature

Beef Glaze

  • Combine syrup, soy sauce and cherries in a small pan over medium heat
  • Squeeze in juice from lemon and stir well
  • Once mixture is heated, add sugar and stir until dissolved
  • Once dissolved, remove from heat and serve
